It’s that time of year again, and this holiday season will pose an unprecedented challenge to our industry. The supply chain struggles to meet consumer demand, delivery windows are disappearing, and a common question keeps popping up—what do we do? When faced with limited options, we must be resourceful and develop creative solutions to prepare for this winter, and the upcoming holiday season. Below are few ways you can prepare for the difficult months ahead.

First, buy extra product when you can. Do you own a smokehouse, and is your main product boneless pork butt? Then instead of buying 10 this week, consider purchasing 15. Freeze the other 5 just in case there is another pork shortage. Do you go through a particular appetizer that has been difficult to find? When you do find it, buy as much of that product you can store and thank yourself later!

Second, substitute products you can’t get with products you can, and then utilize those substitutions on your menu. For example, do you always sell broccoli casserole during Thanksgiving, but broccoli florets are hard to come by? This year, buy green beans, and serve green bean casserole instead. Adapting to these new challenges will help your business thrive.

Finally, ask questions—lots of them. Your salesperson is your resource to what is happening in the industry. If they don’t have an answer for what’s happening, then ask them for a solution to your problem. Our experienced and knowledgeable sales team is how we separate ourselves from our competitors. Do you need a revamped menu every time prices go up? Call your salesperson. Do you need a substitute but can’t think of anything else that might sell well? Call your salesperson. Use their experience as your tool.

If you know you’re going to order turkeys or hams this year, please reach out to your salesperson now, as those will be in short supply. Also, begin planning for any other holiday specials you will offer this year. Being more proactive, rather than reactive will brace your business for this holiday season.

As things change, so does Brown Foodservice. We are more determined than ever to adapt to any environment to ensure we deliver excellent service to our customers. To all our customers – big and small – we appreciate you and are here to help you any way we can.
